Black Beans For Breakfast!

I wanted to share one of my all time favourite breakfast recipes with you… we have this at home fairly often and it is super amazing!

Ingredients:

1/2 can black beans, drained and rinsed (1 can serves 2 people depending on you appetite and needs)

2 Eggs (or more if you’re making this at home for the family - 1 can of beans per 4 eggs)

Sliced Red & Green Chilli to taste (we love spicy food - you can use capsicum/bell pepper for flavour if you don’t enjoy the spice)

Juice of 1/4 Lime

1/2 Avocado - Sliced

1Tbs butter (or olive oil)

Salt & Pepper to taste

Method:

Place all of the ingredients inn oven proof container, gently mix, and crack your eggs on top, cover and place into the pre-heated oven.

Cook for about 20 minutes on 180 degrees, or until the eggs are cooked to your liking.

Season with salt and pepper to taste.
