Healthy Coleslaw

We love coleslaw! Unfortunately all too often it just isn’t healthy - full of heavy mayonnaise and oil - meaning we really can’t eat as much as we really want. With this recipe you can throw restraint out the window and eat up all of the goodness in front of you!

We make this coleslaw all the time - is amazing in fish tacos!

Ingredients:

Serves 3-4

Coleslaw:

  • 1 cup red cabbage, thinly sliced

  • 1 cup green cabbage or wombok, thinly sliced

  • 1 small/med red capsicum, thinly sliced

  • 1/2 red onion, thinly sliced

  • 1 small carrot, grated

  • (You could also add corn, mango, avocado, mint leaves, lemon

Dressing:

  • 1/2 cup greek yoghurt

  • 1 TBS Dijon mustard

  • 1-2 TBS Seeded mustard

  • Juice of 1/2 Lime

  • 1/4 tsp chilli powder (or to taste)

  • Salt & pepper to taste

 

Instructions:

  • In a large bowl, combine cabbage, onion, carrot and capsicum (plus any other veggies you want to add)

  • In a small bowl, whisk together yogurt, mustard, lime juice and chili powder. Season with salt and pepper as desired.

  • Gently mix the dressing into the coleslaw until combined. Refrigerate if not consuming immediately.
