Ensalada de Pallares (Peruvian Style Bean Salad)

This is a fantastic accompaniment to Tacos, BBQ or our amazing Peruvian Style Chicken (coming soon) - actually, this is a fantastic side dish with any main meal.

Ingredients (3-6 serves):

I x 440g tin Lima Beans (Butter Beans)

1 x large onion, julienned (or chopped into small (5-6mm) pieces)

2 x tomatoes - peeled and deseeded, finely chopped (5-6mm pieces)

1 x Jalapeno chili (Habanero Chili is even better if you like the heat) - deveined and seeded, finely chopped (5-6mm pieces)

1 x tsp dried oregano (or more if using fresh herbs)

2 x Tbsp finely chopped parsley

1 x Tbsp olive oil

1 x tsp white vinegar

Juice of 3 limes

Salt & Pepper to taste

Instructions:

Drain and rinse the beans in a colander

In a medium bowl combine oil, chili, tomato, onion, oregano, 1 Tbsp parsley, vinegar & lime juice, mix well.

Add the beans and stir through.

Season to taste

Serve garnished with remaining parsley
