Our Amazing Peruvian Style Roast Chicken

We’re lucky enough to have a rotisserie setup for our kettle BBQ so this exceptional roast chicken is an absolute highlight for us. If you don’t have access to a rotisserie or kettle BBQ don’t stress - it still tastes amazing cooked in a regular oven…

Ingredients:

  • 1 whole chicken - about 1.8kg

  • 1/4 cup white vinegar

  • 3 Tbsp white wine

  • 3 Tbsp vegetable oil (we used Olive oil)

  • 2 Tbsp garlic powder

  • 2 Tbsp paprika (we like the hot one)

  • 4 tsp ground cumin

  • 2 tsp ground black pepper

  • 1/2 tsp salt (or to taste)

Instructions:

Combine all ingredients (except the chicken) in a bowl and mix well to form a paste

Place the chicken in a zip-loc bag, or marinating tray, pour the paste over the chicken. Coat the chicken completely with the paste (this is where the zip-loc bag really helps) and under the skin as much as possible.

Marinate in the sealed bag (or tray) for at least 2 hours, up to 24 hours.

Cook for around 1.5 hours at 150C until tender and cooked through (min 85C internal temperature).

Rest for 10-12 minutes before carving.

Serve with our Ensalada de Pallares for an amazingly tasty healthy meal.
